Grate the potatoes on a medium grater into a bowl. Add all other ingredients and mix well.
Drop by tablespoons into hot shortening in the frying pan; flatten with back of spoon and fry until
medium brown on each side.
Serve plain, with apple sauce or with sour cream.
- 3 large potatoes
- 1 T. flour
- 1/8 teaspoon black pepper
- 2 eggs
- 3 T. cracker meal or bread crumbs
- 1/2 teaspoon salt
- 1/2 teaspoon onion (optional)
