Palacsinta (Hungarian crepes) - Beata Middlebrook
Palacsinta Batter
- 3 cups sifted unbleached flour ( I use King Arthur)
- 1 1/2 teaspoons salt
- 1 Tablespoon sugar
- 6 eggs
- 1 1/2 cups of milk
- 1 1 /2 teaspoons vanilla extract (real vanilla, not the imitation extract)
- 6 Tablespoons melted butter
- About 1 1/2 cups club soda
- 3 Tablespoons cooking oil ( I use canola)
This recipe makes about 20 6 1/2 inch crepes.
Mixer method: mix flour, salt and sugar. Work in the eggs one at a time,
then very gradually add the milk, beating well after each addition.
Beat in the melted butter and vanilla. Strain the batter to remove any large lumps.
Cover and refrigerate for at least 2 hours or overnight.
Just before using, stir the batter and pour in as much club soda
as needed to make a thin batter. You want the consistency of light cream.
Do yourself a favor and buy a 6 1/2 inch teflon crepe pan and use it JUST for crepes.
I have 2 of them and believe me, they make this process much easier.
Heat the crepe pan on medium flame until very hot, brush with oil. When it starts to smoke
pick it up off the flame, pour 2-3 tablespoons into the middle of the pan and quickly swirl it
around until the batter coats the entire bottom of the pan.
A palacsinta should be very thin without getting lacy. It helps if you can use a small ladle
or small ice cream scoop. Remember you just want it to coat the bottom of the pan. This takes a bit of practice.
If you put too much batter into the pan, just pour the excess off and use it for the next crepe.
Put the pan back on the heat for about a minute, give it a good jerk and turn it quickly with a spatula. Cook briefly
on the second side and slide the crepe onto a plate or pie plate.
Keep crepes warm in the oven or cover and refrigerate and warm them up later.
Jam Fillings
You can use apricot jam, or strawberry or raspberry or whatever jam you like.
Spread a thin layer on the palacsinta, roll it up or fold them and dust with confectioners sugar.
Walnut or Hazelnut Filling
Cook 1 1/2 cups of coarsely ground nuts, 6 tablespoons sifted confectioners sugar and
3/4 cup of milk until you have a thick mush. Spread some on each palacsinta, roll or fold them and dust with confectioners sugar.
This fills 18-20 palacsintas.
Pot Cheese Filling
- 1 pound pot cheese or small curd cottage cheese
- 3 eggs, separated
- 1/2 cup sifted confectioners sugar
- Grated rind of 1 lemon(1 1/2 to 2 teaspoons)
- 1/4 cup yellow seedless raisins
- 3/4 cup sour cream
- 3 tablespoons buttermilk
Lightly butter as many shallow oval or oblong baking dishes that you need
to hold all the palacsinta rolls in ONE layer.
Strain the cheese and force it through a potato ricer, or a fine mesh sieve.
Mix well with the egg yolks, confectioners sugar and grated lemon rind.
Stir in the raisins. Beat the 3 egg whites until stiff and fold them in.
Spread some of the filling on each palacsinta, roll it and place into baking dish.
Thin the sour cream with the buttermilk, whisk it with a fork and spread on the palacsinta rolls.
Put in a preheated 325 degree oven for 20-25 min. Serve immediately.

Szilvás gombóc (plum dumplings) - Ty Fedak
One of my alltime favorites as a kid. Mom made these all the time.

Szilvás gombóc (plum dumplings)
- 12 plums
- 12 lumps of sugar
- 3 tbls sugar
- 2 cups flour
- 2 cups cooked potatoes (chilled)
- 1 tsp salt
- 2 eggs
- 3/4 cups buttered crumbs
Remove the pits, but do NOT cut them in half.
Fill center with sugar lump (or cube)
Slice the butter thin into the flour, mix until mixture is coarse.
Add in potatoes, salt and eggs.
Knead the dough well.
Roll it out 1/4 inch thick on a floured board.
Cut into 3" squares.
Place the plums on square, moisten the edges and pinch it all together around the plum.
Dust the hands with flour and roll the dumpling around the flour.
Gently drop the dumpling into a large pot of boiling water. Don't let the water boil too violently or it will break them up.
Cook 15 minutes.
Carefully lift each one out, and roll in buttered crumbs. Serve hot. (I used to add more sugar if the plumbs were sour). Egészségedre!!

Red Velvet Cake II - Diane C Kosowicz
Red Velvet Cake
- 1/2 cup shortening
- 2 cups sugar
- 3 eggs
- 3 cups flour
- 2 tablespoons baking cocoa powder
- 1/2 teaspoon salt
- 1 1/4 cup Whole buttermilk
- 4 oz red food coloring
- 1 1/2 teaspoon baking soda
- 1 1/2 tablespoon white vinegar
Preheat oven to 350. Cream shortening and sugar together until fluffy. Beat in the eggs. Sift together the flour, cocoa powder and salt and add alternately with the buttermilk and red color to the creamed mixture. Dissolve the baking soda in the vinegar and fold in. (the baking soda will foam up. do not use mixer, FOLD in with spatula) You should bake in two 9 inch round pans, or preferably three 8 inch pans. Pans should be greased and floured. Bake at 350 for 30 minutes or until done. Done is when the top springs back. Cool on racks, then frost with Red Velvet Cake frosting.

- 3 very well rounded tablespoons unbleached flour
- 1+ about 1/8 cup Whole milk
- 5 tablespoons shortening
- 2 cups sugar
- large pinch salt
- about a tablespoon vanilla
In a heavy sauce pan mix flour and milk until smooth. heat, stirring until the mixture thickens, set off stove. Cream butter, shortening, sugar and salt until light fluffy add vanilla. Combine the milk mixture and creamed mixture, starting a slow speed and working up to high whip speed. Continue whipping until very fluffy. Frost and fill the layers. Cake may be refrigerated, the frosting will become solid or the cake may be left in sealed cake protector for frosting to remain loose.

Cherry Coconut Peanut Butter Cookies - Kim Spera Bamburak
Cherry Coconut Peanut Butter Cookies
- 2 1/2 cups of flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup (2 sticks) butter
- 1 cup creamy or super chunk peanut butter
- 1 cup sugar
- 1 cup packed brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 6 1/2 ounces of flaked coconut
- red or green candied cherries, halved
In large bowl with electric mixer at medium speed, beat butter and peanut butter until smooth. Beat in sugars until blended. Beat in eggs and vanilaa. Add flour mixture; beat until well blended.
If necessary, refrigerate dough for easier handling.
Preheat oven to 350F.
Shape dough into 1 inch balls.
Spread coconut on waxed paper; roll balls in coconut.
Place red or green cherry half in center of each cookie.
Bake for 15 minutes, or until lightly browned. Cool completely on wire racks.
Store in tightly covered container.

Thumbprint Treasures
- 1/2 cup (1 Stick) butter or margarine
- 1/2 cup packed light brown sugar
- 1 egg
- 1 1/2 cups flour
- 1 egg white, slightly beaten
- 1 cup finely chopped walnuts
- 3/4 to 1 cup strawberry, black raspberry, cherry, apricot or peach preserves
Beat in egg. Stir in flour and blend thoroughly. Wrap dough and refrigerate about 1 hour, to chill slightly.
Preheat oven to 350 degrees.
With floured hands, roll pieces of dough into 1 inche balls.
Dip balls into egg white, then roll in chopped nuts.
Place cookies 2 inches apart on prepared cookie sheets.
With your thumb make an indentation in center of each cookie.
Bake for 10 to 12 minutes or until lightly browned.
Cool on wire racks.. (If centers have risen during baking, press down again while cookies are hot.)
When cool, fill each center with about 1 level tablespoon preserves.

NUT ROLL - by Mary Haelsen's Little Sister
Blogger's note: There are a number of Poppy Seed and Nut Roll Recipes here, I felt we should post them all due to the fact they are "Perth Amboy's Family Recipes".
My little sister makes the best nut rolls. She modifed my mom's and grandfather's recipes, combining the best of each,which is probably why they are so delicious. Here is her recipe. NUT ROLL
(dough)
- 1 envelope (or square) yeast
- 1/4 cup warm milk
- 1/2 pound butter (2 sticks)
- 4 egg yolks, beaten
- 1/2 pint of half & half
- 4 cups flour
- 1tsp sugar
- 3/4 tsp salt
Dissolve yeast in warm milk. Melt butter & mix with beaten egg yolks.
In separate bowl sift flour, sugar & salt. Mix yeast with butter, egg yolks & half & half. Add flour. Mix until smooth. Shape into 3 balls & refrigerate overnight.
(Nut filling)
- 1 pound walnuts, finely chopped
- 1 1/2 cups sugar
- 1 tsp vanilla
- 4 egg whites, beaten stiff
Mix nuts, sugar vanilla. Fold in Beaten egg whites. Use 1 to 1 1/4 cups per roll. (Usually I make this and refrigerate overnight with the dough but you can just keep the egg whites in and make the mixture the next day..up to you.)
Roll out each ball into a 1/8 to 1/4 inch thick rectangle. Spread with filling to within 1/2 inch of sides. Roll up & place loaves on baking (ungreased) sheet and place in warm spot for 3 hours. ( I usually cover loaves with clean dish towel while they rest).
Brush top with beaten egg & Bake @ 325 for 1 hour.

COQUITO RECIPE - Lee Chico
Boil the spices in water a few minutes till water nice and brown, strain and let cool. In meantime combinel all the canned fluids and egg yolks, then add cooled spiced water and stir well. Bottle and refrigerate. That is the recipe for all family members.
For ADULTS add about 1 cup or to taste of Puerto Rican rum, making sure its a good quality white clear rum. This should be made several days prior to drinking as the flavors marinate best over a few days.
There are several different recipes out there some more simple than others, will shortly post another one without eggs for those leery of raw eggs in their drink.

Sour Cream Chocolate Cake - by Lucille (Nancy) Shneer
Sour Cream Chocolate Cake
Recipe from a Church fundraising book (Ukrainian) 1960's. Recipe is by Lucille Shneer her recipe will live on for all of us to enjoy.
Grease and flour the bottom of a 13 x 9 x 2" baking pan or 2 9" layer pans. Heat oven to 350
Add:
- 1 C of sour cream,
- 1/3 c of shortening and beat for 2 minutes.
- Add 3 squares of melted chocalate,
- 2 eggs, 1 tsp of vanilla,
- 1/2 c of hot water.
Bake at 25 minutes for a sheet cake and 25 minutes in the 2 layer pans or until the knife comes out clean.
Cake should spring back when touched.
Add icing of your choice of confectioners sugar.
Holiday Snow Balls - Mary-Ann Makar

Ingredients as follows:
- 1 stick of butter
- 1 tsp. vanilla
- 1 c of ground walnuts or pecans
- confectioners sugar
- 2 tbsp of sugar
- 1 1/4 c. of sifted regular all purpose flour
In mixing bowl cream butter, add sugar and beat intil creamy. Blend in vanilla, flour, & nuts. Chill. Shape into one inch balls. Place on baking sheet. Bake 15-20 minutes while still hot, roll in confectioers sugar. Cool on wire rack. Roll again in the confectioners sugar.

Pumpkin Layer Cheesecake - Kim Spera Bamburak
Pumpkin Layer Cheesecake
Prep:10 minutes. Bake 40 minutes
- 2 pkg. (8oz. each) PHILADELPHIA Cream Cheese, softened
- 1/2 cup sugar
- 1/2 tsp. vanilla
- 2 eggs
- 1/2 cup canned pumpkin
- 1/2 tsp. ground cinnamon
- Dash EACH gound cloves and nutmeg
- 1 ready-to-use graham cracker crust (6 oz. or 9 inch)
MIX cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix until blended.
STIR pumpkin and spices into 1 cup of the batter; pour remaining plain batter into crust. Top with pumpkin batter.
BAKE at 350 degrees for 35 to 40 minutes or until center is almost set.
Cool. Refrigerate 3 hours or overnight. Makes 8 servings.

Palacsinta (Crepes)
- 4 eggs beaten
- 2 cups milk
- 2 cups sifted flour
- 1 tsp. salt
- 2 tsp. sugar
- 1 1/2 tbsp. oil
Mix flour, salt and sugar. Combine beaten eggs, milk and oil and add to flour mixture gradually making a thin smooth batter.
Add butter or oil to skillet getting it hot, add a small amount of batter making a THIN pancake. Brown lightly both sides and remove. Repeat till all batter is gone. Spread filling on pancake, roll and put into a warm oven in buttered baking dish till heated. Remove, sprinkle with powered sugar.
Fillings: Any jams or preserves, prune and cheese fillings (see below) Cheese filling:
- 1/2 lb. cottage cheese
- 1 egg yolk
- 1/4 cup sugar
- 1/4 tsp. vanilla
Beat together.

Kugel (Noodle Pudding) - Linda Grossman Beckman
Noodle Pudding (Kugel)
- 1 large bag of (medium) Pennsylvania Dutch Noodles (use a little more than 1/2 the bag.)
- 1 stick butter
- 1/2 to 3/4 cup of sugar
- 1-8 oz sour cream
- 1-8 oz whipped cottage cheese
- 1-8 oz crushed pineapple (include the juice)
- 4-5 large eggs
- Cinnamon
Preheat oven to 350 degrees. Melt butter (careful it doesn't burn), in a 13 x 9 inch pan. Cook noodles 2 minutes less than cooking directions call for. Drain noodles and place in large mixing bowl. Add butter (cooled), sugar, sour cream, cottage cheese, pineapple, and eggs. Mix well by hand and pour into pan. Sprinkle cinnamon on top. Bake 1 hour. ENJOY!

UKRAINIAN POPPYSEED ROLL - Mrs. Olga Levytsky
This is an old Ukrainian Recipe from the 1960's found in a Ukrainian fund raising cookbook I found at a garage sale. I am giving honorable mention to the original posters of the recipes from the old book. The poster here of this recipe was, Mrs. Olga Levytsky ...here it is around 50 years later...your recipe will live on Mrs. Levytsky and will be enjoyed.
POPPYSEED ROLL
POPPYSEED ROLL
- 1 cake yeast
- 1/3 c butter
- 1 tsp. salt
- 2 eggs, beaten
- 3 Tbsp. sugar
- 1/3 c. of milk scalded
- 1/2 tsp. vanilla
- 2 1/2 c. sifted flour Use more if you feel you need it
Poppysead Filling
Your Choice:
Use 1 can of prepared poppysead filling or 3/4 c. poppysead ground and cooked with 1/2 c. milk, 4 Tbsp. sugar, 2 Tbsp. butter, and 1/2 tsp. of vanilla
Soften yeast in 1 Tbsp. of sugar.
Add remaining sugar, salt and butter to scalded milk.
Stir until well blended.
Cool to lukewarm.
Add yeast, eggs and vanilla then blend.
Add flour to make soft dough.
Turn onto lightly floured board and knead until smooth and elastiv.
Place in a lightly greased bowl, cover with a damp cloth and let rise until dough is double in bulk or size.
Turn out on a lightly floured board and roll nto rectangle about 12 x 8 inches. Cut into 3 equal parts. Divide the filling into three portions. Spead evenly over each part of the dough. Roll as for Jelly Roll, beginning at the widest side.Bake around 40 minutes in a 350 degree. Remove from pan and while it is still warm brush the top with thin confectioners sugar frosting.
FILLING
For un prepared poppysead filling, place poppyseads and milk in the pan. Cook slowly until milk is absorbed. Add sugar, butter and vanilla. Blend well. Cook mixture to consistency of jam.

LEMON CINNAMON COFFEE CAKE - Susan Wolf Shelton
Husband loves cake. This is a simple cake I make all the time. Try it with other pie fillings if you don't like lemon. If you use all oil as the original recipe calls for, it will have less saturated fat for those that have a concern.
In a large bowl beat 1 cup of sugar, oil, and eggs. Combine the flour, baking powder and salt. Gradually beat into egg mixture until blended.
Pour half into a 9x13 baking pan. Spread pie filling over batter. Top with remaining batter. Combine the cinnamon and the remaining ¼ cup of sugar. Sprinkle over the entire top.
Bake at 350 for 30 minutes.
***Tip- I melt 1 stick of unsalted butter and ¼ cup of oil instead of all oil, but can be done either way.
Can use other pie fillings such as apple etc.

- ¾ cup canola oil
- 4 eggs
- 2 cups all purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 can (15-3/4 ounces) lemon pie filling
- 2 heaping teaspoons cinnamon
In a large bowl beat 1 cup of sugar, oil, and eggs. Combine the flour, baking powder and salt. Gradually beat into egg mixture until blended.
Pour half into a 9x13 baking pan. Spread pie filling over batter. Top with remaining batter. Combine the cinnamon and the remaining ¼ cup of sugar. Sprinkle over the entire top.

Polish Little Cakes - Kolaczki - Kathy Syontko Szemcsak
My Mom, Sophie, always made these Little Cakes around Christmas and Easter in our home on Johnstone Street.

- Makes about 7-9 dozen Fruit Filled Cookies
- Prep Time: 20 minutes
- Cook Time: 15 minutes
- Total Time: 35 minutes
All times are Approximates - Kathy wanted the times in to show that it does not take long to make them.
Ingredients:
- 1 (16-ounce) cream cheese, softened
- 1 lb. (4 sticks) butter, softened
- 4 1/2 cups all-purpose flour
- 2 (14-ounce) cans fillings of choice (poppy seed, apricot, prune, raspberry, etc.)
- Confectioners' sugar
Mix cream cheese and butter until light and fluffy. Add
flour 1 cup at a time and mix well. Wrap dough in plastic and refrigerate for
at least 1 hour.
Heat oven to 350 degrees. Roll out dough 1/4-inch on a
surface that has been dusted with equal parts confectioners' and granulated
sugars, keeps the dough from sticking. Cut into 2-inch squares. Place 1/2 to 1
teaspoon filling on center of each square. Overlap opposite corners of dough to
the center over filling.
Bake for 15 minutes
or when corners start to brown. Cool and dust with confectioners’ sugar. If not eating in a day or two, do not put confectioners' sugar on it, wrap or store in tight container. Freezing is acceptable also.

Banana Bread With Walnuts - Jon B. Tumpey
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 4 overripe bananas
- 1 cup sugar
- 3/4 cup (11/2 sticks) unsalted butter, melted and cooled
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1/2 cup walnuts, finely chopped
- Confectioners' sugar, for dusting
- Preheat oven to 350 degrees F.
- Lightly grease a 9 by 5-inch loaf pan.
- In a large bowl, combine the flour, baking soda, and salt; set aside.
- Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture.
- With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together for a good 3 minutes; you want a light and fluffy banana cream.
- Add the melted butter, eggs, and vanilla; beat well and scrape down the sides of the bowl.
- Mix in the dry ingredients just until incorporated; no need to overly blend.
- Fold in the walnuts and the mashed bananas with a rubber spatula.
- Pour the batter into the prepared loaf pan. Give the pan a good rap on the counter to get any air bubbles out.
- Bake for about 1 hour and 15 minutes, until golden brown and a toothpick inserted into the center of the loaf comes out clean.
- Rotate the pan periodically to ensure even browning.
- Don't get nervous if the banana bread develops a crack down the center of the loaf; that's no mistake, it's typical.
- Cool the bread in the pan for 10 minutes or so, and then turn out onto a wire rack to cool completely before slicing.
- Toast the slices of banana bread, dust with confectioners' sugar, and serve.
Zucchini Bread - Peggy Konopka Martinez
Ingredients:
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 cup egg substitute
- 1/3 cup canola oil
- 1 teaspoon grated lemon rind
- 2 teaspoons vanilla extract
- 1 large egg, lightly beaten
- 1 1/2 cups sugar
- 3 cups shredded zucchini (12 ounces)
- 1/4 cup coarsely chopped walnuts, toasted
- Cooking spray
Preparation:
- Preheat oven to 350°.
- Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (through baking soda) in a large bowl.
- Combine egg substitute and next 4 ingredients (through egg) in a large bowl; add sugar, stirring until combined. Add zucchini; stir until well combined. Add flour mixture; stir just until combined. Stir in walnuts.
- Divide batter evenly between 2 (8 x 4-inch) loaf pans coated with cooking spray. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pans on a wire rack; remove from pans. Cool completely on wire rack.
Peanut Butter Chocolate Chip Cookies - Sharon Bancroft Perez
Ingredients:
- 2 2/3 - 3 cups flour
- 1 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 2TBS vanilla
- 1 tsp baking soda
- 1 tsp salt
- 3/4 tsp baking powder
- 3/4 bag chocolate chips
- 3/4 bag peanut butter chips.
Pre heat oven to 375 degrees. In separate bowl.mix dry ingredients. Mix butter,sugar,and brown sugar. Add eggs and vanilla. Add dry ingredients. Bake for 10-12 minutes

African-American Coconut Pound Cake - Susan Wolf Shelton
This was given to me years ago. When I worked at RBMS (even when it was PAGH), I would make this for the other nurses. It was always a success. Here is a history of the recipe.This recipe comes from an African-American who traces her roots to Africa. She grew up in Chicago, but stories have been handed down in her family from generation to generation. The family music was also traced back to Africa. The family would sit, listen and learn eating these cakes. There, the African griot, or storyteller would use linguistic pitch and tone to perform his lessons, often performing with a flute or baulafo, an African xylophone. Over the years there might have been some changes to accommodate the availability of foods in America, but her grandmother assures her it is almost the same.
- 1 ½ cups unsalted butter ( 3 sticks)
- 3 cups sugar
- 6 eggs
- 1 teaspoon salt
- 3 teaspoons baking powder
- 3 cups flour
- 1 ½ cups sweetened, flake coconut
- 1 cup whole milk
- 2 very large, ripe bananas
- 1 tablespoon pure vanilla
- 1 teaspoon banana extract
- 2 teaspoons coconut extract
Cream butter until light and fluffy. Gradually blend in sugar and mix well. Add eggs one at a time. Beat well after each addition. Combine flour, salt, and baking powder in a separate bowl.
In a food processor, puree coconut and milk till as smooth as possible. Add bananas to this mixture and process until bananas are pureed.
Beginning with dry ingredients, add to butter mixture alternately with coconut puree and extracts. Begin with dry ingredients and end with dry ingredients. There should be four additions of dry and three additions of liquid ingredients.
Mix well, but do not overbeat.
Lightly grease a large tube pan. Pour into pan. Bake in a pre-heated 350-degree oven for 1 hour and 15 minutes. Cake tester should come out with only a few crumbs. Cool thoroughly before removing from pan. This cake should NOT be served the same day it is baked. Protect in a cake keeper and serve the next day. Cake may be glazed with a powder sugar glaze flavored with coconut extract and coconut sprinkled on top.
GLAZE:
- 1 cup powder sugar
- 2-3 tablespoons milk
- ½ teaspoon coconut extract
- Coconut for sprinkling
